Apple Crisp

There is nothing more delicious than warm apple crisp, with a scoop or ice cream and a cup of tea on a cool summer night. I made this tasty treat a few weeks ago for a family dinner and it got wonderful reviews. It’s based on several apple crisp recipes I have used in the past, and I’ve tried to make it healthier by using quite a bit less sugar (just over 1 cup total).


2⁄3 cup granulated sugar
1⁄4 cup all-purpose flour
1 tsp grated lemon rind 
8 cups sliced apples 

3⁄4 cup quick-cooking rolled oats
1⁄3 cup packed brown sugar 
3 tbsp whole-wheat flour 
1 tsp cinnamon 
2 tbsp non-hydrogenated soft margarine, melted

STEP 1) In bowl, combine sugar, flour and lemon rind; mix well.

STEP 2) Add apples; stir to mix.

STEP 3) Spoon into 2 L (8 cup) baking dish.

STEP 4) In bowl, combine rolled oats, sugar, flour and cinnamon.


STEP 5) Add melted margarine and stir to mix; sprinkle over filling.


STEP 6) Bake in 190°C (375°F) oven for 40 to 50 minutes or until filling is bubbly and topping is brown.
